Chocolate Truffles with Dried Raspberries

Chocolate truffles are easier to make than you think!

They also make the perfect foodie gift for family and friends.


  • ½ cup of freeze dried raspberries
  • 250ml of double cream
  • 100g moist, dark brown sugar
  • 250g of best quality dark chocolate (chopped into small pieces)
  • Pinch of sea salt
  • Cocoa powder    


  1. Add the raspberries to a blender and process on high until finely ground.
  2. Add into a small plastic or ceramic container, large enough to allow you to roll the truffles in once ready.
  3. In a saucepan, gently heat the cream, sugar and salt together until steaming.
  4. Allow to slightly cool, and then pour the chopped chocolate over the cream.
  5. Allow to stand for a minute before stiring to combine to create a smooth, glossy ganache.
  6. Refrigerate until the mixture has set.
  7. To create the truffles, lightly coat hands in cocoa powder, and roll teaspoon sized portions into balls.
  8. Drop balls individually into the raspberries and gently nudge until each is coated to preference.
  9. Add to a new plastic container (handling truffles as little as possible) and place in the fridge to set for a few hours before serving.
