Grilled Paprika Chicken Burger

This mouthwatering chicken burger recipe is perfect for a casual lunch or picnic with friends


  • 4 brioche buns
  • 4 skinless chicken breasts
  • 2 tbsp olive oil
  • Whole egg mayonnaise

For the chicken seasoning

  • 1 tbsp ground cumin
  • 1 tbsp ground coriander
  • 1 tbsp paprika
  • 2 teaspoons of lemon juice
  • 1 small garlic clove crushed

For the slaw

  • 2 cucumbers
  • 2 carrots
  • 1 green onion thinly sliced
  • 2 tbsp white wine vinegar
  • 2 tbsp fresh lime juice
  • 2 tbsp olive oil
  • Fresh ground black pepper


To make the slaw

  1. Thinly slice the vegetables to preference, using a mandolin or spiralizer
  2. In a bowl combine the olive oil, white wine vinegar, lime juice and pepper. Whisk dressing and pour over ingredients. Gently toss through the green onion.
  3. Set aside. 

Seasoning the chicken

  1. Mix the seasoning ingredients together, adding salt and pepper to taste. Set aside.
  2. On a board, layout the chicken and flatten slightly using a rolling pin or similar. Drizzle with olive oil and then add to the bowl of seasoning, until completely covered.

For the Burgers

  1. Pre-heat a grill or BBQ to a high heat
  2. Lightly cover the grill with a brush of olive oil.
  3. Add the chicken and cook for 5 minutes on each side or until chicken is cooked through.
  4. Cut rolls in half, add a layer of mayonnaise before adding a piece of chicken and topping with slaw


Consider plating all ingredients together on a platter and letting friends build their own burgers

Why not make these for a picnic. Allow the chicken to cool, before making burgers for each person, and wrapping in waxed paper or cooking sheet.
