Pizza with chorizo


  • 600g local flour
  • 20g salt
  • 7g dried yeast
  • 360 ml tepid water
  • 10ml (2 teaspoons) olive oil

  • 250ml tomato passatta
  • 2 handfuls baby spinach leaves
  • 1 red onion, peeled and sliced
  • 3 chorizo sausages, sliced
  • I handful green olives, pitted
  • 150g manchego cheese, grated


Place the flour and salt into a mixing bowl.
Mix the yeast with the water until dissolved.
Let sit for 5 minutes then add to the flour with the oil.
Mix until forms a dough.
Allow to rest 1 hour then divide into 6 balls. Roll each out to fit a 20cm pizza
Preheat oven to 220°C.
Spread the top of each pizza with the tomato pasatta. Spread over the spinach, red onion, chorizo and olives. Sprinkle over the cheese and bake for 10-15 minutes until crisp, golden and cooked through.
