NEGROAMARO

This Negroamaro from our Heritage Vineyard was handpicked early with the grapes fully ripened by air-drying on racks. This fascinating technique known as “appassimento” dates back to ancient Roman times and is rarely used in Australia. The result is a wine with new dimensions of complexity and concentration. Displaying a gamey and rustic nose, the palate reveals cherries, charred leek, spices and a fine gravelly finish.

AROMA & PALATE

There are the tastes of green apple, zest of lime, fragrant yellow grapefruit and hints of freshly cut grass. In time honey and toast will develop.

The delicate palate is defined by the bright acidity and mouth-watering citrus pith. After careful cellaring this will lead towards rich lemon marmalade. Delicate, pure with salivating citrus pith on the finish.

FOOD MATCHES

Rich seafoods such as lobster and salmon. Chicken in a creamy sauce.
