This fascinating technique known as “appassimento” dates back to ancient Roman times and is rarely used in Australia. The result is a wine with new dimensions of complexity and concentration. Displaying a gamey and rustic nose, the palate reveals cherries, charred leek, spices and a fine gravelly finish.
